Cafeteria Manager

About the Job

The Café Manager oversees daily operations in one of Xanterra's Ala Carte cafeterias in Yellowstone National Park. 

REPORTING RELATIONSHIPS:

Reports directly to the Food and Beverage Manager on duty.

RESPONSIBILITIES:

  • Provide excellent guest service in an efficient manner.
  • Ensure that the facility is ready to open fifteen minutes prior to the posted opening time.
  • Develop effective schedules for the FOH Cafeteria staff based on levels of business and budgetary guidelines.
  • Control costs: food, labor and other expenses.                              
  • Be on the floor 100% of the time during a meal service period to observe, monitor and follow up on all areas of the Cafeteria operation on a daily basis.
  • Maintain the cleanliness and organization of the dining, service, and preparation areas in accordance with established standards of sanitation.
  • Maintain appearance and uniform standards.
  • Train and develop Assistant Cafeteria Managers and all FOH Cafeteria personnel.
  • Provide ongoing feedback to all FOH personnel and Assistant Cafeteria Managers concerning all aspects of the Cafeteria operation.
  • Work with the Chef on duty in maintaining high standards of food presentation and sanitation.
  • Direct and assist employees as necessary to ensure a smooth running operation.
  • Monitor the food on the hot and cold service lines to see that presentation and food quality standards are being met.
  • Commit food specifications and preparations to memory and ensure that all FOH food handlers know and follow the food specifications for plating any menu items.
  • Ensure that the staff is following established service standards.
  • Motivate staff members to maximize sales by utilizing menu knowledge and suggestive selling techniques.
  • Develop and present written evaluations for all FOH Cafeteria personnel, periodically, in the How’s It Going (HIG) format.   
  • Interact with guests on an ongoing basis to ensure that service and food quality expectations are being met.
  • Handle all guest service issues in an immediate and professional manner.
  • Monitor and react to all situations mentioned on comment cards and provide written comments on actions taken.
  • Responsible for the secure handling and balancing of an assigned cash bank.
  • Follow Company and departmental environmental practices to minimize wasted energy and resources.
  • Follow Company and departmental safety practices to minimize risk to self and others.
  • Follow Company and departmental policies and procedures.

SKILLS AND KNOWLEDGE:

  • Ability to absorb and retain a large amount of information.
  • Ability to assess equipment and/or operational problems and determine appropriate course of action.
  • Knowledge of all menus and specifications.
  • Basic knowledge of sanitation and back-of-the-house safety and sanitation procedures.
  • Knowledge of Aloha point-of-sale system and cashier banking procedures.
  • Certification in the TIPS alcohol awareness program is required.  Workshops will be provided if not currently certified.

PHYSICAL REQUIREMENTS:

  • Must be able to stand for long periods of time, approximately 8 hours.
  • Must be able to walk for long periods of time.
  • Must be able to lift and carry a minimum of 50 pounds.
  • Must be able to bend, stretch and reach for extended periods of time.

AUTHORITIES:

Direct Assistant Cafeteria Managers and/or Shift Supervisors and general staff. 
To communicate with the storekeeper, accounting, and maintenance. 
To address situations within the operation.
