In summer 2005, Xanterra Parks & Resorts® established the Greater Yellowstone Chapter of the American Culinary Federation, a world renowned professional culinary organization. This is part of Xanterra's commitment to employee development and culinary excellence.

The American Culinary Federation was established in 1929 through the combined visions of three chefs in New York City who wanted to make a positive difference for culinarians around the world. Today this mission is accomplished successfully through education, apprenticeship and certification. Members of the ACF experience a bonding and fraternity of respect and integrity worldwide.

The American Culinary Federation...

  • Has 20,000 members, making it the largest organization of culinarians
       in the Western Hemisphere.
  • Is made of 240 chapters in the U.S., Bermuda and the Caribbean.
  • Has certified more than 20,000 chefs since 1973.
  • Is the only certifier of U.S. Master Chefs and Master Pastry Chefs.
  • Graduated approximately 3,500 culinary and pastry/baking apprentices since 1976.
  • Is the industry standard of foodservice programming accreditation.
  • Is the largest organization of professional cooks in the United States.

With seven categories of membership, each person can find an area which meets his/her professional needs. Memberships can be be held in areas including upper-level management,student and non-culinary Food & Beverage employees.

    While the rewards of being a member of the ACF are numerous, some of them begin with awards, including U.S.A.'s Chef of the Year, Pastry Chef, Student, Educator and Student Team, along with the Chef Professionalism Award, Chef's Achievement Award and Awards of Excellence nationwide.

    For those new to Food & Beverage, the American Culinary Federation can be a door to the future. Education and certification are offered to the "newly culinary" in many ways. The ACF operates the only comprehensive certification program for chefs in the United States, with eleven different programs to choose from.

    American Culinary Federation Another educational choice may be the ACF's globally-lauded apprenticeship-training program for cooks and pastry cooks. The ACF offers two and three year programs in 71 sponsoring operations nationwide. Currently, Xanterra in Yellowstone is working with the ACF to create our own apprenticeship program, slated to begin in 2007.
